Finding harmony between authenticity and originality is something that ignited the flame at Mesa Verde in 2013 and continues to feed it today.

While it’s evident that an affinity for Mexican fare and agave spirits is at the helm of what Mesa Verde do, the city's rank on the culinary frontier has brought with it a particular hunger for experimentation. So, since Mesa Verde is literally in the heart of ³Ô¹ÏÍø, up on the sixth and penultimate floor of Curtin House, they feel it’s their responsibility to highlight what Mexican dining (and drinking) looks like in the eyes of the modern Melburnian.
